Oregano,
Origanum vulgare, belongs to the Lamiaceae (Labiatae) family. It's an evergreen plant with purple flowers and shovel-shaped, olive green leaves. Its leaves are used as a culinary condiment, either 'dry' or 'fresh', providing sensations like 'spicy', 'pleasantly bitter', 'herbaceous' and 'aromatic', among others. Two constituents of
Oregano, carvacrol and thymol, contribute to the sensation of warmth in the mouth due to their action on temperature-sensitive structures. The
use of oregano dates back to the Greeks and Romans who used it because of its properties both for seasoning foods and for their traditional herbology. The word
Oregano derives from the classical Greek
orī́ganon and from the Latin
orīganum. This is a compound Greek term:
óros, meaning 'mountain', and
gános, meaning 'shine', so it is known as "mountain shine".
